My cousin Veronica is absolutely amazing!!! She has been a God-sent really, and no words can express how much I appreciate her and I am so thankful that she is here with me in Kenya. Some of you might wonder why I would go on and on about her so let me explain. Of course she is my cousin and of course she is beautiful, but beyond kindness and beauty she is a fantastic cook. Since we've been in Kenya, she has cooked dinner almost every evening. We've had Greek Salad, Pasta Salad with Peppers and Tomatoes, Greek Salad with pasta, Greek Salad with chickpeas...ok so Greek Salad has been pretty much the main meal with other ingredients added, but I mean we are in Kenya right? The other night we had a great dinner...Taco Salad, but tonight so far it's been the best meal....Pasta with turkey...couldn't find chicken, but I must say it did taste more like chicken than turkey, it was some sort of fowl...anyway where was I? Oh right, tonight's dinner....yep so tonight's dinner was Pasta with bird meat simmered with peppers, onions, crushed tomatoes in a tomato sauce.....so good!!! So normally V cooks using the gas stove in the kitchen downstairs but the gas wasn't working today so she had to cook over the fire...kind of like camping....or as we say it over here...'how the kenyans do it'.
